Mark Best is celebrated as one of the world’s most innovative chefs. He was welcomed to the Holland America Line Culinary Council during an event hosted onboard ms Amsterdam earlier this month.
Mark Best joins a number of prominent chefs on the Culinary Council, including Holland America Line’s Master Chef and Council Chairman Rudi Sodamin.
Best is bringing a number of French-inspired signature dishes with him to Holland America Line, and he’ll work with the other council members to shape the culinary direction of the entire fleet.
About Mark Best:
Mark Best found his passion for French food during an apprenticeship at a bistro in New South Wales, Australia back in 1990. During his time there, he was awarded with the Josephine Pignolet Award for best young chef in New South Wales.
After, Best worked overseas in a number of world famous French restaurants, including Alain Passard’s three-Michelin-star L’Arpege in Paris, France, and Raymond Blanc’s Le Manoir Aux Quatre Saisons in Oxford, England.
In 1999 Best returned home to Australia and opened his own restaurant called “Marque”, which is located in Sydney’s Slurry Hills. In 2010, Marque won the UK Restaurant Magazine’s World Best 50 Restaurants “Breakthrough Award”. Marque also ranks among the San Pellegrino World Top 100 Restaurants, and was named 2011 restaurant of the year by Sydney Morning Herald’s “The Good Food Guide.” The restaurant won the 2012 Australian Gourmet Traveller restaurant of the year award too! In addition, Marque has held the prestigious Three Hats title from the The Good Food Guide, as well as the maximum three stars from the Australian Gourmet Traveller magazine in its annual top 100 list.
To top it all off, Best has also recently published a cookbook, “Marque: A Culinary Adventure,” and also has appeared on the television show “MasterChef Australia”, both as a guest chef and a judge.
Speaking ahead of the event onboard ms Amsterdam, Richard Meadows, executive vice president, marketing, sales and guest programs for Holland America Line said:

Mark is known for his innovative Australian cuisine and we look forward to seeing his passionate influence on our menus and introducing his flair and originality to our guests.”
Rudi Sodamin, the chairman of the Culinary Council and Holland America Line’s culinary consultant added:
“The Culinary Council is a collaboration of some of the greatest international chefs, and Mark brings imaginative ideas from a part of the world that is very inventive with cuisine. Mark has great energy and creativity and our guests are really going to enjoy his dishes.”
